The oil is made from olives that are hand harvested from 150 year old trees, resulting in a fresh, vibrant, green, and peppery oil that changes in subtle ways with the characteristics of the seasons. The balsamic has a rich, silky texture and deep, sweet flavor profile. Trebbiano and Lambrusco grapes are grown organically and hand-selected.
